Blackcurrant
cream
It is in 1841 that was discovered
the blackcurrant liquor. Before this date, the blackcurrant was
especially cultivated like fruit of table, but one also assigned
some therapeutic virtues to its leaves.
During the 20th century, the culture of the cassissier spread
and rationalized himself to concentrate soon in Coast of gold.
The small arbustreses to the black bays now cover trays of our High-Coast.
The blackcurrant cream manufactures
himself by brewing. After having been exploded mildly, fruits are
put to macerate, to cold weather, on the neutral alcohol. This one,
during the four weeks that is going to last the steeping, is going
to stuff itself of the color and aromas of fruits.
A blackcurrant cream must be
composed to the minimum of 15% of alcohol, of 400g of sugar and
200g of fruits.
Fruits are selected rigorously
and come more from the two varieties, the best adapted to this manufacture
:the Royal of Naples and the Black of Burgundy.
The drink to the most famous
blackcurrant ream basis is heard the Kir well. It is the KIR canon,
famous deputy-mayor of Dijon in years 40, that immortalized this
intoxicating beuvrage, made of Aligoté and blackcurrant cream. The Kir can be dry (1/5 Cream-colored duplicate
of Blackcurrant and 4/5 Aligotés) or soft (1/4 Cream-colored duplicate
of Blackcurrant and 3/4 Aligotés) or " royal " (1/5 Cream-colored
duplicate of Blackcurrant and 4/5 sparkling wine dry or raw) or
" cardinal " (1/5 Cream-colored duplicate of Blackcurrant
and 4/5 Beaujolaises hit).
