Autumn fermentations (13.11.2008)
As the vine completes its cycle showing its magnificent autumn colours, in the fermenting cellar, we are preparing to welcome in a great vintage. At the end of October, the sugars were completely transformed into alcohol. The natural alcohol level is at around 12.5° for the Petits Chablis and Chablis, and 13° for the Premiers and Grand Crus.

For a few days, malolactic fermentation has been getting underway. Clément Lamblin (12th generation Lamblin viticulturer) carefully monitors daily the progress of this delicate and crucial period in Chablis vinification. But already, this new wine is beginning to offer suppleness and roundness.

Harvest 2008: Full of promise (30.09.2008)
For the past few days, activity has been in full swing in Chablis. On vineyards roads, tractors pulling trailer loads of beautiful grapes drive around. Wines presses flow with a juice full of natural sugars.

The mild temperatures of the summer and the combination of the suns rays and the wind dried the grape berries throughout September. Since 25/09, maturation has been reached, the concentrations are perfect and the acidity is balanced – all of which are comparable to 1996. In a few days, fermentation will start and slowly, this soft nectar will become wine…..

Vintage 2007, Very Typified Chablis (26/03/2008)
Minerality, freshness, crunching ! This is what arose in the 2007 vintage... With such temperamental weather, the vine knew to draw its richness from the ground and so we have the best expression of terroir. The iodized and salty aromas are intensified. The fruit flavours are delicate and discrete. A vintage to lay down, 2007 is one you will have to wait to drink.

Harvest
2007: Return to classicism (17/10/2007)
After
a mild winter and a superb spring, the vine was very much in advance.
The average summer that we had, moderated the advancement of the
vegetative cycle and a harvesting permit was declared on September
1st. Thanks to a good follow-up, the vine remained nice and healthy.
The grape harvest started around September 6th/7th in order to
benefit from the plentiful sun of this period. It was thus done
under good atmospheric conditions and we returned a wonderful
harvest. To date, the alcoholic fermentations are finished and
we await the start of malolactic fermentations. Already, the new
harvest is declared as a very "typified" Chablis: fresh,
mineral based and lively, with an excellent ageing potential !

A
very early flowering (06/07/2007)
In
the memories of wine growers, it is necessary to go back more
than a century to find such an early flowering of the vines. Indeed,
the first flowers appeared in the vineyards about ten days in
advance of the 2003 vintage (around May 15). If the good weather
and the summer temperatures in April stimulated the vine, the
rains in May will have favoured the growth. With Harvest taking
place usually 100 days after flowering, we are already talking
about harvesting towards the end of August. But the hail storms
of the 25th June, having ravaged certain plots of land, means
that the amount of grapes to harvest is less than envisaged.

2006
Vintage (06/02/2007)
According to the Lamblin family, this vintage already
offers a powerful and intense nose with intense ripe fruits.
The mouth is soft, delicate and beautifully balanced. The Chablis
terroir is fully expressed within this vintage which has to
go through extreme climate conditions. Minerality is present,
but it will need time to fully express itself..
