Chablis Grand Cru Vaudésir

These are the great lords of the appellation. There are seven of them (Les Clos, Vaudésir, Valmur, Blanchot, les Preuses, Grenouille, Bougros), all grouped together in the same well-defined geographical area. Rich and generous, harmonious and long, they must be "expected" three to four years to express all their greatness. They will age ten years for the good years, fifteen years and more for the great years.

Terroir

Chablis Grand Cru is located on the right bank of the Serein (river that crosses the vineyard), in the northeast of the city, between 100 and 250 meters above the sea level. The Chablis Grand Cru appellation is unique, divided into 7 climates. Soil composed of calcareous marl, very rich in tiny fossil oysters (Exogyra virgula). The land dates back to the Upper Jurassic, formed 150 million years ago. Set in the very heart of the Grand Cru area, Vaudésir has a subtle diversity in exposure. Its steep terrain contains more clay than limestone and produces wines of great finesse and elegance.

Vinification

Fermentation in oak barrels aged 2 to 3 years. The wine is then racked to remove fermentation lees. The maturing phase then begins, which will last from 12 to 18 months depending on the vintage. A light bentonite fining will then be applied to remove the proteins from the wine. Finally, a gentle filtration before bottling will clarify it in a natural way.

Tasting notes 

Beautiful brilliant golden yellow colour with green reflections. An expressive nose with a complexity ensured by elegant and delicate floral aromas, complemented by mineral notes (gunflint), toasted, vanilla, honey and hazelnut. Impressive frank attack pursued by a good balance in the mouth with a potential of weel-balanced roundness and fat. Fine aromas of prestige: white flowers (elderberry, lilac), mineral notes, hazelnut, toasted and spices, lead up to an exceptional long finish.

Tasting notes

The full and rich vivacity of Chablis Grand Cru offers “foie gras” a great dry wine. The complex subtlety of its aromas, as well as its great persistence at the end of the palate, predestine a perfect harmony with lobsters, crayfish. All fine fish with cream sauce, white meats and poultry in cream sauce.
