Chablis Old Vines

Located in the heart of the Chablis vineyards, the Vieilles Vignes are about forty years old. They are cultivated with particular care (short pruning, leaf removal, manual harvesting). The grape juice they produce is vinified and aged in the purest respect of tradition (natural fermentation followed by a rest of at least 6 months and very low filtration). Chablis Vieilles Vignes expresses all the authenticity of the terroir. The aromas drawn from the soil are rich and powerful.

Terroir

The main base comes from Jurassic; from the Kimmeridgian some 150 million years ago and there is thus a deposit of tiny oysters in the rocks, remnants of the warm and shallow seas that covered Burgundy at the time. Chablis is the world’s most famous French white wine appellation! This Chablis comes from a selection of vines over 35 years old.

Vinification

In stainless steel tanks to respect the characteristics of the Chablis terroir and allow all its minerality to express itself. Natural malolactic fermentation. Cold storage in an isothermal tank to promote the precipitation of tartaric acid. Light filtration on Kieselguhr to clarify naturally the wine. Maturation of 6 months.

Tasting notes

Pale yellow and bright colour with slight green tints. Fine and complex nose with beautiful gunflint notes. Round, fresh and lively, this Chablis “Old Vines” has a very long finish. The fruity citrus flavours are still young, but the existing structure promises an excellent future.

Food & wine pairing 

Irreplaceable, it can be enjoyed yound (2/3 years old). Perfect pairing with appetizers! Also with; seafood, oysters, fish dishes, sushis, white meats, as well as exotic cuisines. And very good with cheeses: goat, Beaufort, Comté and Emmental.
