Vinified by the 12th generation of Lamblin winemakers, this Chablis AOP innovates not only by its caracter but also by its method of vinification exempt of sulfur.
Located near Auxerre in the department of Yonne, the vineyard of Chablis hugs a little river with the predestined name: Le Serein. The Pontigny based Ciscercian monks planted their vines here in the XIIth century. Instituted in January 1938, the A.O.P. Chablis confirms the excellence of a white wine that was, much more than other vineyards, able to maintain it’s ranking during the course off history thanks to high quality vine population (Chardonnay). The primary bedrock comes from Jurassic, more precisely kimméridgien about 150 million years ago, we can thus find tiny oyster deposits in the rocks, remains of the warm and shallow sea that then covered Burgundy.

Derived from manual harvest, the grapes are meticulously sorted before pressing.
To avoid risk of oxydation, vinification is effected in steel tanks under an inert gas environment.
6 months in steel tanks without collage nor filtration
Light yellow, clear and shiny wine. Open nose, hinting tree fruits. At airing the pallet enriches with an exotic note accompanied by yellow flowers. Ample and persistant in the mouth, presenting a nice maturiy and mineral freshness. Long and fruited final.
Will go very will with a plate of sushi, sashimi
