Chablis Oak barrel fermented

Vinified by the 12th generation of Lamblin winemakers, this Chablis AOC innovates not only by its delicately woody character, but also by its high-class packaging. Clément and Alexandre Lamblin thus mark their arrival in the House with this brand new cuvée aged in oak barrels.

Terroir

The main base comes from Jurassic; from the Kimmeridgian some 150 million years ago and there is thus a deposit of tiny oysters in the rocks, remnants of the warm and shallow seas that covered Burgundy at the time. Chablis is the world’s most famous French white wine appellation!

Vinification

Fermentation in 2 to 3 years old barrels made from French oak. Regular stirring (2 to 3 times per month). Racking to remove the lees after malolactic fermentations, resting in oak barrels for 6 months. No cold stabilization. Light filtration on Kieselguhr to clarify naturally the wine.

ELEVAGE

 Soutirage pour éliminer les lies après fermentation malolactique, Repos en fûts de chêne pendant 6 mois. Pas de passage au froid. Légère filtration sur Kieselguhr : terre de Diatomées qui permet de clarifier le vin de façon naturelle.

Tasting notes

Bright and clear yellow colour. Fruity nose with a finesse expressed by delicate aromas of exotic fruits. Pleasant roundness in the mouth with a light vivacity. Beautiful vanilla flavours mixed with subtle woody notes nuanced by a fine minerality. Good balance, good length in the mouth.

Fish, white meats in sauce. Perfect with grilled shellfish (lobster).
