Vinification

Manual harvesting, cold maceration then fermentation in indigenous yeasts, vatting for 18 days, maturing on lees for 15 to 18 months in barrels of 2 or 3 wines.

Tasting notes

Red-brown colour. Intense and racy nose, which expresses all its power through subtle aromas of blackcurrant berries and other small red or black fruits, to which animal notes are added. Rich on the palate, this wine with firm tannins and strong character has a fleshy texture and a full-bodied body.

The powerful flavours and aromas of the wines of Gevrey-Chambertin call for a rather full-bodied and elaborate cuisine: leg of lamb, beef bourguignon, stews, coq au vin, game pâtés, strong cheeses (except blue cheeses).
