Saint Bris “Sauvignon”

Sauvignon grape variety : the only vineyard in Burgundy with Sauvignon grape variety planted.

Its very exuberant nose is characterized by a crumpled blackcurrant scent, dominated by aromas of exotic fruits, freshly cut grass or pepper, depending on the year. It is fresh and very fruity on the palate with good aromatic persistence.

Vinification

Traditional fermantation in stainless steel tanks. Controlled temperature, 100% malolactic.

Tasting notes

Notes of citrus fruits (grapefruit, mandarin), peach and blackcurrant leaves. Sometimes accompanied by exotic nuances (lychee), this complexity leas to an ample, floral and tender fruitiness, with a spicy and iodine finish. Age will lead it to aromas of jams and candied fruits.

Food & wine pairing

Aperitif, shellfish, oysters, fish dishes especially with northen dishes, it aso goes very well with spicy dishes such as curry and saffron. Perfect with goat’s cheese.
